Bali lies 25 kilo meters south of the equator smack bang in the middle of the tropics The humid climate, deep ocean currents and volcanic heights of up to 3000 feet above sea level allows mother nature to create some of the most beautiful ingredients on the planet.

In this morning session we have dug up south Asia’s archives’ to bring you a new world of treats You will learn to identify and sense and prepare all these gorgeous wonders.

On the sunny shore, south west Bali lyses small fishing community of Jimbaran Bay. Directly in front is Kuta reef, which protect this corner of the bay from the big wave rollers

We start the day here shopping for the freshest catch tuna, mahi-mahi, snapper, crab, king prawns and many more. You will come face to face with fisherman and seaman alike. Once we taclked this battle, it’s off to collect fresh fruit and vegetables from Jimbaran wet market and back to the safety of Seminyak Restaurant to start the day cooking

  • Squid satay, diced and marinate with Bali seafood paste
  • Mahi mahi diced and marinate with Bali seafood paste
  • Chicken satay lilit, minced chicken mix with spices
  • Flamed grilled tuna salad, with corn Bali spices and crispy shallot and mung bean
  • Shellfish soup mix of seafood, prawn, squids, scallop, in spices and coconut cream
  • Baby shrimp and corn cake, with spicy tomato  sambal
  • Tuna parcel with mix spice grilled in banana leaf
  • Barbeque Balinese snapper in traditional Bali spice paste  
  • Flamed grilled tuna/mahi mahi marinate Bali seafood paste and wrapped in banana leaf
  • Coconut spiced mangrove crab wok fried in Bali paste and coconut cream (pre order)
  • Flamed grilled king prawn in Bali seafood spice paste
  • Mi goreng noodles fried with vegetable, chicken, seafood or mix 
  • Bali chicken curry, slowly braised in chicken spice paste, coconut and kaffir lime leaf
  • Black rice pudding served with sweet palm sugar and coconut cream
  • Fried banana with vanilla sauce and palm sugar syrup
